Season 3 Episode 10

The tenth episode of Season 3 of Hell’s Kitchen aired on Fox, on August 6, 2007. On that episode, Bonnie and Rock designed their own restaurants, participated in their final challenge, and reunited with their former teammates.

Intro

The episode began with a recap of the first nine episodes of the season, mentioning what happened, and who got eliminated when. During that recap, Josh received the coat hanging and burning picture sequence for the first time since his elimination.

The episode began at the exact point the last one ended. A giant curtain dropped between Rock and Bonnie and Ramsay revealed their biggest challenge. Both of them had to create new restaurants on their own half of Hell’s Kitchen, with Rock cooking out of the blue kitchen, and Bonnie cooking out of the red kitchen. Ramsay allowed Bonnie and Rock some time with their families and revealed to Rock that his son and daughter were also there. Rock reconnected with his children while Bonnie was told by her mother that she and her dad were very proud of her. The finalists’ loved ones eventually left, and Ramsay told the two to start thinking of their restaurant ideas.

Back in the dorms, Rock and Bonnie celebrated their biggest milestone and congratulated each other. They relaxed for the night, and Rock admitted he thought he and Melissa would be the final two chefs left, but Bonnie told him that the other chefs underestimated her which was their downfall. That shook Rock a bit and even feared that he might lose to her, while Bonnie was ready to beat Rock.

New restaurant design

The next morning, Rock and Bonnie began to work on their restaurant ideas. The finalists met up with Hell’s Kitchen architect Jon Janavs to describe their visions of their restaurant. Bonnie’s vision was a more classical approach with mismatched china, while Rock wanted a more contemporary theme to his restaurant that had matching decor. After their discussion with Janavs, both of them met Jean-Philippe to discuss what the waiting staff would be wearing. Bonnie wanted all the waiters dressed in black, with the women wearing fitted pants, while Rock’s idea for the waiters to wear jeans was rejected.

As construction began, Rock and Bonnie met with their respective Sous Chefs, Scott for Rock, and Mary-Ann for Bonnie, to discuss some menu ideas. Bonnie had a clear vision for her menu as it featured a lot of her favorite foods to eat, while Rock struggled to get his vision to Scott as he was not prepared for his menu.

Las Vegas trip

Before the final two could check up on the progress of their restaurants, Ramsay approached the two and told them that there was one more matter of business to take care of. He announced that he was taking both of them to Las Vegas. The two excitedly packed their bags, and flew on a private jet. While flying, Ramsay recalled the time Rock had an angry outburst after losing the Lobster Challenge, the time when he served frozen gnocchi for his signature dish, and the time he put up Brad for elimination instead of Josh after the last team service. Ramsay also expressed surprise to Bonnie on how much she improved despite the fact she failed to cook quail eggs on the opening service, and her impressive anger during the assertiveness training before the previous service. Each of them said they would be the winner, which caused Ramsay to note that it would be a fierce battle.

They landed in Las Vegas and made their way to the Green Valley Ranch Resort & Spa, which would be the grand prize for the winner. The final two made it to their room and saw a promo clip of their time in Hell’s Kitchen on the Television, which excited them.

Final challenge

Later that night, Ramsay took Rock and Bonnie outside and told them they would be getting drinks. When they went through the VIP area, they saw a huge crowd of people. Ramsay introduced the audience to the final two and told them that they would be competing in their final challenge. In front of the live audience, both would cook their new signature dishes from their menu in 30 minutes, which would be judged by some of Vegas’ best chefs.

After changing into their chef’s jackets, Rock and Bonnie got to work on their dishes. Rock was making his surf and turf dish that had fried chicken and crab cakes, while Bonnie cooked her shrimp and lobster pasta. Despite the pressure, both were able to cook their dishes and plate them in time.

Returning back to the live audience, Rock and Bonnie were ready to be judged. The first judge up was Sean Griffin, Chef De Cuisine of Caesar’s Palace who went with Bonnie’s dish for her perfectly cooked shrimp. The next judge up was Gerald Chin, Executive Chef at the MGM Grand, and he picked Rock’s dish tying the score at 1 each. The third judge up was Anthony Carron, Cooperate Executive Chef of the Michael Mina Group. He chose Bonnie’s dish, putting her back in the lead 2-1. The fourth judge was TV star Robin Leach, known for Lifestyles of the Rich and Famous, and he favored Bonnie’s dish as well which kept her lead at 3-1. Ramsay then revealed that the fifth judge was Season 1 winner Michael Wray, who, since winning, opened up his own restaurant named Tatou. Michael tasted both dishes and decided on Rock’s dish, closing the gap 3-2, with Bonnie still in the lead. After, Ramsay revealed that the sixth judge was Season 2 winner Heather West, and just like Michael, she preferred Rock’s dish. The score became a tie at 3. To break the tie, Ramsay invited Chris Fearnow and Bob Finch, the General Manager and the Executive Chef of the Green Valley Ranch Resort & Spa. After tasting both dishes, both of them agreed that Bonnie’s dish was better and she won the challenge 4-3.

After the challenge, Ramsay took Rock and Bonnie to a skyscraper and celebrated with champagne. Then, Ramsay gave them an invitation to New York City, and eat at the Gordon Ramsay New London NYC in the chef’s table while spending a few days in the city, which they accepted.

Team select

Later that night, Rock and Bonnie returned to Hell’s Kitchen and while the crew was working on their restaurants, the final two shared one last meal together. As the two ate, Rock admitted that he changed a lot in the competition and sometimes he can doubt his own skills, though Bonnie knew he was trying to use psychological warfare against her.

The next morning, Rock and Bonnie were relaxing in the dorms when Brad, Jen, Julia, Melissa, Josh, and Vinnie came in. Everybody was excited to see each other again and caught up. Brad was shocked that Rock and Bonnie were the finalists, but he was rooting for Rock to win. Bonnie and Jen reconnected, with the latter rooting for Bonnie to win. As Bonnie was checking out the gift basket, Julia, still disappointed in getting eliminated so close to the end, ended up breaking into tears. Julia went into the bathroom to calm down, and Bonnie knew that Julia really wanted to win. A phone call from Ramsay occurred, with him calling everybody down to the kitchen.

Ramsay welcomed back the returning chefs but noticed that Julia was still crying, so he asked her if she was okay. Julia claimed she was, but stated that her low point was being here right now and seeing the finalists. Recalling a few moments, Ramsay reminded Josh of his elimination in the middle of the first black jacket service, Vinnie getting a raw egg smashed in the chest in the third service, Jen winning the American Classic’s Challenge, Brad’s poor performance during the Army and Navy Service Challenge, Melissa’s poor performance during the fourth service, and Julia winning the Alhambra High School Lunch Challenge. Then, Ramsay told Bonnie that since she won the last challenge, she got first pick of her team. Bonnie immediately chose Jen while Rock chose Brad for being the strongest of the five remaining. Bonnie’s second pick was Melissa, due to being nervous about Julia’s emotional state, and Rock chose Vinnie for his second choice as he thought Vinnie would do well under good direction. That left Julia and Josh as the last choices, and Bonnie picked Julia as she wanted the girls back together but was unaware that Julia was secretly rooting for Rock to win. That left Rock with Josh as his last pick, although Rock admitted it was better Josh than Julia as he was concerned for her state at the moments. Ramsay sent everyone back upstairs so Rock and Bonnie could get their teams up to speed, and the episode ended on a cliffhanger.

 

Season 3 Episode 9

The ninth episode of Season 3 of Hell’s Kitchen aired on Fox, on July 30, 2007. On that episode, Ramsay surprised the chefs with some special judges, and tested their skills at the pass in that night’s service to decide who would be in the finals.

Intro

On their way back upstairs, Rock approached Jen and apologized to her for his behavior in service, and the two made up by hugging each other. Back in the dorms, Bonnie and Jen were upset that Julia was eliminated, but Bonnie hoped that Julia would take Ramsay’s offer. Rock himself was upset as Julia was an inspiration to him and he was proud of her accomplishments. Bonnie expressed surprise that they went from five to three in one night and that she never expected to make it to the final three. Jen also added that Rock was determined to win as he had a poor upbringing in the past.

Individual challenge

The next morning, the three remaining chefs went downstairs and met an uncharacteristically cheerful Ramsay. Ramsay explained to them that he has worked with some phenomenal chefs, and introduced the three to who he considered the best chef in his life, who was his own mother, Helen Ramsay. Helen came into the dining room holding a plate of food, and Ramsay introduced her to the chefs, while telling Rock to never swear in front of his mom, nor his own mom. Helen revealed that she brought Ramsay’s favorite dish, macaroni and cheese. Ramsay explained that some customers preferred ordering comfort food for their meal as it reminded them of their childhood, but in a fine-dining environment, you had to elevate the dish. He then revealed his own macaroni and cheese dish which included lobster, black truffle, and aged parmesan cheese in it.

Ramsay revealed that for their next challenge, they would be taking some of America’s classic dishes and elevating it to the level of fine-dining. Sous Chefs Scott and Mary-Ann wheeled in two carts that had five domes. Under those domes contained what America classic the chefs would be cooking with. Bonnie went up first and got Frank and Beans for her dish, though she thought it was a British classic. Jen went up next and got Fried Chicken, which excited her. Rock got Spaghetti and Meatballs for his dish. Ramsay gave the three one hour to cook their dishes.

The three headed to the kitchens and began cooking. They were allowed to use anything in the pantry to help cook their dish. Bonnie, who never had Frank and Beans before, asked Sous Chef Scott what it looked like, much to his dismay. Bonnie later swore in frustration, though Ramsay sternly warned her not to. All three of them had ideas on what to use for their dishes and were able to complete cooking and plating their dishes.

The three brought over their dishes and revealed them to Ramsay and Helen. Bonnie presented her Italian version of Frank and Beans which had mini bruschetta and a mushroom wheat cream sauce in it. Rock made spaghetti three ways that had cream sauce, veal, and spicy chorizo and pork respectively. Finally, Jen made a fried chicken roulade stuffed with crab meat, spinach, and goat cheese. All three dishes impressed Ramsay and he sent them back in line. Then, Ramsay revealed to the three that he invited some special judges to help him out, and much to their surprise, it was their own respective mothers. Ramsay had the three moms sit with their backs towards the chefs, and they had to remain quiet during the judging. The moms tasted Rock’s dish first, Jen’s dish second, and Bonnie’s dish last. After the three tasted their dishes, Ramsay asked each which of the three dishes was their favorite. All three said the fried chicken was their favorite which meant Jen was the winner. However, Ramsay allowed Bonnie and Rock to spend time with their moms before sending them off.

Reward

Jen had lunch with Ramsay at The Lodge Steakhouse and brought along their mothers for the trip. During lunch, Ramsay gave Jen some encouragement for next service. After lunch, Ramsay took Jen to Surface kitchen equipment shop and gave her a $1000 shopping spree there. Jen, along with her mom, managed to buy a lot of equipment while maintaining the $1000 budget. After saying goodbye to her mom, Jen returned back to the dorms and met with Bonnie and Rock.

Punishment

Bonnie and Rock had to clean the dorm rooms and were given a list of what they needed to clean from their Sous Chefs. Bonnie revealed that the only cleaning stuff she knew how to do was making beds and using Windex. That surprised Rock given that Bonnie worked as a nanny, but she revealed that her job as a nanny only consisted of cooking and babysitting. Bonnie’s bossy attitude along with her complaints mildly irritated Rock, but he did not mind it too much.

Before service

The next morning, the chefs went downstairs to begin prep for their biggest service yet. All three of them were determined to make it to the finals and eventually win, and prep went without any problems.

When the chefs were lined up, Ramsay reminded them how big service would be as it would determine which two would be in the finals. Then, Ramsay revealed that for that night’s service, he would let them have a chance to run the pass, as this would allow Ramsay to see who was capable of leadership. Ramsay also offered the chefs an opportunity to do some assertiveness training with him. Bonnie’s training left Ramsay surprised at her anger, Rock’s first attempt was weak but managed to pick it up on his second attempt, and Jen’s attempts were similar to Rock’s. Once training was done, Ramsay ordered Jean-Philippe to open Hell’s Kitchen.

Dinner service

Orders soon came in and Ramsay took the lead in the beginning. Rock and Jen were able to get their appetizers out with no problems and Ramsay praised them for their good start. Ramsay pulled over Sous Chefs Scott and Mary-Ann, and told them to make at least two mistakes in order to further test the chefs on the hot plate.

Jen was called up to run the pass first. She called out her first ticket with assertiveness, but her first quality test soon came as Sous Chef Scott sent up a spaghetti that had no crab in it. Jen failed to notice it, forcing Ramsay to stop the waiter sending it up and told her that she had to pay more attention. However, Jen managed to recover by refusing Sous Chef Scott’s risotto as it was overcooked with no seasoning, and continued to prove her assertiveness though she got confused by a couple of correct orders she thought were wrong.

Rock was up next. He called out his first ticket well but proved to be slow when plating food. Sous Chef Scott sent up another quality test which was monkfish without ham, but Rock was able to catch it. Despite passing the test, Rock was still slow on plating and not being vocal enough which Bonnie took note of.

The final person up was Bonnie. She messed up when calling her first ticket out, which confused some of the chefs. However, Bonnie was able to notice that the pigeon Sous Chef Scott sent up did not have crispy skin, and called out Jen for not adding enough salt to the risotto. Jen soon revealed that she ran out of risottos as she overcooked the rest of her rice, much to Ramsay’s dismay. Despite that problem, Bonnie completed her run with no further problems.

Ramsay took over the pass for the last tables, and the rest of the orders came through without any problems.

Post mortem

Ramsay lined up the chefs and declared that was their best service so far, and congratulated them for sending up their dishes with very minor problems. However, Ramsay reminded the three that their performances up on the pass had some highs and lows, so he would be judging their performances based on their time up on the hot plate as well as how they performed on their stations. Then, Ramsay told the three to get back up to the dorms, and come up with an explanation on why one of them should be in the finals.

Back in the dorms, Jen asked Bonnie if she still wanted this as she feared Bonnie’s heart was not in the right place. Bonnie admitted that she was originally terrified of taking a giant step up in her career but was now confident she could do it. Rock took a look at some family photos he brought with him, and reflected on how winning this competition would change his family’s life.

Elimination

The final three made it downstairs to meet Ramsay, who asked each of them why they deserved to be in the finals. Bonnie said it was because of her growth in the competition, Jen said she was passionate about cooking, and Rock said that he grew in both a chef and as a leader. Ramsay remarked that all three of them had some very good highs that night and it would be a tough decision. Ramsay called up Rock’s name and told him that he was the first finalist, much to his pleasure. This left Bonnie and Jen remaining. After some thinking, Ramsay said that Jen would be going home. Before Jen left, Ramsay praised her for her passion for food and urged her to continue it. Jen hugged Ramsay goodbye and left. During her exit interview, Jen received a retrospective montage of her run.

After Jen left, Ramsay congratulated Bonnie and Rock for being the final two and that they were very close to win the grand prize. Then, Ramsay surprised the two of them by revealing that Rock’s wife and Bonnie’s parents were standing behind them, and the two reunited with their loved ones. Ramsay told the final two that they came a long way since the beginning, and that they both deserved to be here. Then, Ramsay announced that their biggest challenge was about to start, soon as a giant curtain dropped down separating the dining room, and the episode ended as a cliffhanger.

Ramsay gave no comment on Jen’s elimination, and she did not receive the coat hanging and burning picture sequence.

My opinion

Jen was the right person to go tonight because she was bad then the other at the hot plate.

My comment: Unfortunately for Jen, she was not a leader but a good chef. That why she went home.

Season 3 Episode 8

The eighth episode of Season 3 of Hell’s Kitchen aired on Fox, on July 23, 2007. On that episode, the remaining chefs merged into the black jackets, one chef did not even complete dinner service, and a tearful elimination of an emerging cook occurred.

Intro

Back to the dorms, Julia expressed surprise that Ramsay kept Bonnie over Brad, and even Bonnie herself was surprised. However, Rock was happy Brad left as he was his biggest competition so far and he believed he could beat all of the remaining chefs at that point. Rock then bluntly told Josh that his energy was lacking and he had no shot at winning, but Josh still believed that he could win the competition.

Individual challenge

The next morning, both teams came down to the dining room and met Ramsay. With five chefs left, Ramsay told them that there was no red or blue team anymore, and that all of them would now become the black jacket chefs in one team. That news excited the chefs, and Sous Chef Scott presented them with champagne glasses for a celebratory toast that soon led to Ramsay spraying everyone with champagne. The five chefs were sent back upstairs and changed into their new black jackets while congratulating each other on getting this far.

Back downstairs, Ramsay announced the black jackets’ first individual challenge. Each of them would be cooking a dish that would be judged by some special guests and the description of the guests being trendsetters had Jen and Josh believe that they were cooking for celebrities while Julia guessed they were cooking for doctors. Ramsay told Sous Chefs Scott and Mary-Ann to put blindfolds on the chefs and led them to the SUVs. Once they got to their location, it became clear that the “trendsetters” were actually teenagers, and they drove all the way to Alhambra High School. Ramsay explained that for the Alhambra High School Lunch Challenge, each of them had to cook a dish for 100 students, and they had an hour to cook before the lunch period began. The students would vote for their favorite dish and the chef who had the most points would be the winner.

The chefs raced to the kitchen and began working on their dishes. Rock made Kobe beef burgers on ciabatta rolls, Josh was making baked salmon with pineapple salsa, Julia served grilled chicken and cheese sandwiches with onion rings, Bonnie prepared fried goat cheese over salad, and Jen made baked chicken fettuccine with a herbed butter sauce. After the hour passed, the lunch bell rang and the chefs had their lunches ready.

The students made their way to the cafeteria and got a plate from each chef. Each chef had a different way of communicating with the students. Jen urged the students to vote for her, Rock used a political way to sell his dish, Josh casually served his dishes, Bonnie gave an explanation of her dish to some interested students, and Julia also took a casual approach. Ramsay told them to speed up as the line was getting gridlocked, and while Rock tried to argue that the students were coming from both sides, Ramsay shut him down.

Eventually, all the plated were served, and the students tasted the final five’s dishes. After voting for their favorite dish, Ramsay gathered the chefs to announce the winner. In the end, Julia was declared the winner as she had 51% of the votes much to her excitement as it proved she was a great cook.

Reward

Julia’s reward was an overnight trip to Las Vegas with Ramsay, and she was also allowed to pick one of her teammates to come with her. Julia picked Jen, and the three of them flew to Vegas on a private jet. Julia and Jen went to the Green Valley Ranch resort, that would be the grand prize for that season, to stay for the night and had a spa treatment. The next morning, they headed down to the Red Rock Resort where they met Ramsay and Season 2 winner Heather West. Heather took them on a tour through her restaurant Terra Rossa and had some dishes prepared for the two. Also, Heather gave Julia and Jen some advice to help them for the rest of the competition.

Punishment

For Bonnie, Josh, and Rock, their punishment was to head back to Hell’s Kitchen and help Jean-Philippe clean the dining room. Josh struggled on one of the cleaning machines, which caused Jean-Philippe to snarkily tell him that the thing needed electricity, not solar energy, much to Rock’s amusement. Josh almost killed a vacuum cleaner when it picked up a chicken bone while Rock and Bonnie had an argument over ironing the tablecloths, where Bonnie revealed that her only job as a nanny was to cook and had no idea on how to clean anything.

Before service

The next morning, the three chefs left at Hell’s Kitchen headed down to prep for that night’s service. Bonnie accidentally threw out monkfish that she thought smelled rancid, which caused Sous Chef Mary-Ann to chew her out as Bonnie threw out all 23 of the portions they had for service and it was even worse when Sous Chef Scott said it did not smell bad. That incident broke Bonnie’s confidence and feared that she could be going home that night. Back upstairs, Bonnie went on a tangent that Ramsay was favoring Julia the most, but Rock argued that Julia succeeded on what she knew best. Jen and Julia made it back to Hell’s Kitchen, but showing pictures of their trip and describing it made the three other chefs annoyed at the two of them.

Dinner service

Later, Hell’s Kitchen opened, and the first tickets came in. However, Ramsay noticed that Josh already cooked a risotto when there was not one on order yet, and also saw more of them cooked, leaving Ramsay confused and to chew out Josh as that was lost money. Rock brought up his scallops, but they were all burnt at the bottom which dismayed Ramsay even more. It soon got worse when Ramsay found out Josh had cooked spaghetti not to order, and told him that even his own mother would cook it seven minutes before she wants it.

Thirty minutes into service, Ramsay informed Jean-Philippe that they would be serving appetizers and entrées at the same time. Bonnie brought up her Wellingtons and Ramsay said they were well cooked. However, Julia did not have her fennel ready, and an impatient Ramsay took the pan from her. When Julia rudely retorted “whatever”, Ramsay asked if she was taking the piss out of it, and noted that she looked asleep. Josh was caught again cooking spaghetti not to order and Ramsay warned Josh that he was pushing him to the limit.

Automatic elimination

One hour into service, Josh’s appetizers were finally leaving the kitchen. Unfortunately, one of his orders of risotto was sent back for being undercooked. That infuriated Ramsay who berated him for that. Finally at his limit with Josh’s constant poor performances, Ramsay ordered him to take off his jacket and leave Hell’s Kitchen immediately. Josh walked out of the kitchen, but Ramsay ordered him to leave the jacket behind, and eventually followed Josh with same order while angrily calling him a “fucking useless sack of shit”. Josh soon went up to the dorms, packed his belongings, and left through the loading area. During his exit interview, Josh admitted how he would have given up his right arm to continue service, but bitterly admitted that his dream to win was now over. This marked the first time in Hell’s Kitchen history that Ramsay eliminated someone during service. Ramsay gave no comment on Josh’s elimination, and Josh did not receive a retrospective montage of his run.

With Josh gone, the four remaining chefs had to save that service. Jen was moved to the appetizer station and she managed to get a good order of risotto up. However, Julia continued to struggle on the garnish station, and admitted that she forgot about the monkfish garnish, much to Ramsay’s shock. Also, Julia was accused of giving up. Bonnie asked Rock for a time on his turbot, but he forgot about it and snapped at her when she told Ramsay his mistake though Ramsay noted that “Rock has hit rock bottom”. While some of the diners were having a good experience, others were starting to get impatient. Jen tried to communicate with Rock on appetizers, but he ignored her and sent up his scallops before her spaghetti was ready. Jen managed to catch up, but she was pissed by Rock’s attitude in service. This led to an argument between both of them where Jen called him out on his behavior, and Ramsay called Rock out for tossing his order on the hot plate.

Despite the arguing, entrées were going out and the four chefs made it to desserts. However, another argument between Jen and Rock occurred when Rock put the ice cream base on the counter where Bonnie was working on instead of the sink, which led Jen to call him an asshole. However, Ramsay overheard it and reminded them that he got rid of Josh and they should start working like a team. More arguing between the two occurred, and it led Ramsay to bang the overhead to get them to stop. Even though Rock and Jen continued to argue, desserts were all served.

Post-Mortem

Ramsay was disappointed in the chefs because at that point, they had the best five, now four. Ramsay singled out Bonnie for having the best night that service and her best overall performance of the competition, and named her “Best of the Worst”. Then, Ramsay asked Bonnie to come up with two nominees for elimination.

Back in the dorms, the women discussed Rock’s anger in service and were concerned that he cannot control his temper. Jen broke down by the stress of service, and admitted that she wanted to go home. Meanwhile, Rock reflected on his poor attitude in service and admitted that he should have talked with Jen after service instead of arguing with her which severely disappointed him. Bonnie revealed that Rock was a definite choice, but the problem was between Jen and Julia as the second nominee. Julia pleaded her case, and Bonnie revealed that she wanted the three women to continue together.

Elimination

Bonnie named Rock as her first nominee, and Julia as her second. That put Ramsay in a hard place as he had a chef that was completely driven by his career, and a chef that improved a lot in the competition. Eventually, Ramsay eliminated Julia for her poor performance on garnish and her lack of experience. That decision upset the chefs, but Ramsay praised Julia for her growth in the completion and was very proud of her. Them, Ramsay revealed that he would personally send Julia to culinary school because of her potential, and offered her another chance in the competition when she was done. During her exit interview, Julia received a retrospective montage of her run.

Ramsay’s comment: “To become a great chef you must have a natural ability. Clearly, Julia does have it. All she needs is a little more experience. After that, she will be ready to run her own restaurant.”

Julia received the coat hanging and burning picture sequence, but Josh did not.

My opinion

I was not surprised that Josh left during dinner service because I thought Brad should have been there then Josh. It was Julia time to leave tonight.

My comment: If hell kitchen was open a hour before it opened Josh might be there. For Julia she just lack a little of experience.

Season 3 Episode 6

Reward

The red team was taken to a photoshoot for In Touch magazine. The three women got a makeover for the shoot and were joined by Ramsay.

Punishment

The blue team had to participate in Recycling Day, which meant going through the garbage and sorting out the recyclables. That punishment infuriated Rock, not just because the blue team lost to a simple lobster bisque, but also because he grew up in the ghetto and never had to go dumpster diving. His angry attitude shocked his teammates as they never saw him explode like that before. As the blue team sorted through the trash, Sous Chef Scott told Rock that he was needed at the photoshoot. However, it turned out that he was forced to separate the trash there as well, which only infuriated him more. Rock later claimed that he would never force his own brigade to sort through trash.

Before service

The red team returned from their reward and got changed into their chefs jackets. Rock was left alone to calm himself down, and he remained determined to do what he did best. Later that night, both teams got to work on prepping for that night’s service. As this was Melissa’s first time working with the blue team in service, Brad made sure she was focused and Melissa herself wanted to make a good impression. In the red kitchen, the three women were focused on their work and wanted to prove that they could do service without Melissa.

Ramsay had both teams lined up and told Bonnie that her grilled lobster salad was going to be on the menu that night, much to her pleasure. He also told the blue team that as the second part of their punishment, they would have to go and grab the lobster from the tank when the orders would come in the kitchen, and Josh volunteered to do it. Ramsay also warned Melissa that this was her last chance to make a comeback. With both teams at their stations, Ramsay told Jean-Philippe to open Hell’s Kitchen.

Dinner service

The first order for the red team came in and Ramsay reminded the red team that with only three members, they had to move quicker. Josh was sent out to get a lobster for the red kitchen. In the blue kitchen, Ramsay noticed that their pot of water was not boiling, and Brad revealed they just put in fresh water 5 minutes ago, much to Ramsay’s dismay. Josh sent the red team’s lobster to Julia, and the red team sent up their first order of appetizers out of the kitchen. Brad sent up his risotto, but he made too much as three dishes were brought instead of two needed. Ramsay noted that the blue team were not off to a great start and ordered them to not panic. The red kitchen continued to communicate well because of Jen’s leadership, and Ramsay praised that. The red team’s customers were happy for getting food, but the blue kitchen’s customers were still waiting for their food.

Melissa’s scallops were too thin, and Ramsay was upset that everything she touched was screwed and reminded her that this was not the opening night. In the red kitchen, they managed to push out 28 of their appetizers and Ramsay stated that they had the best start in Hell’s Kitchen so far, and urged them to not stop. However, Bonnie’s pan soon caught fire and was uncertain what to do, forcing Ramsay to come in a put the pan in the sink and lectured her on fire safety. In the blue kitchen, Josh prepared the mashed potatoes, but they turned out to be runny as he did not put enough salt into them. This angered Ramsay who compared the blue team to a bunch of fucking babies. The red team’s fast momentum continued as Jen and Bonnie were getting praise for their dishes and Sous Chef Mary-Ann urged them to keep it up. Brad sent up another order of risotto, but it turned out to be overcooked.

An hour and a half into service, and the red team continued to pull ahead on entrées. Julia soon got confused on the sea bass order and panicked, but Ramsay reminded her what he was waiting at her station. When she looked unresponsive, Ramsay asked if she wanted to leave but she retorted that she wanted to stay. Melissa brought up her monkfish, but it was overcooked and Ramsay was angrier that she did not notice it when everyone else knew it was overcooked, while also saying that it looks like regurgitated dog shit. Things got even worse when Melissa revealed that she only had one more monkfish left which meant that none of the six on order would be sent out. A desperate Ramsay then had Rock move from the garnish station over to the fish station in hope that he could save the blue team’s disastrous service, forcing Melissa on the garnish station. Meanwhile, the red team got to work on their last two tickets, but an argument between Bonnie and Julia over Bonnie’s meat erupted, and Julia broke down in tears over the stress catching up to her. In the blue kitchen, they were running out of mashed potatoes and no one knew where to find more. Their problems continued when Jean-Philippe brought back an entire table of six entrées for being overcooked. That served to be the final straw for Ramsay who ordered the blue kitchen to shut down their service.

Post-Mortem

After a lopsided dinner service, Ramsay bluntly told the blue team that a team which had 2 Sous chefs (Josh and Brad), an Executive chef (Rock), and a Line Chef (Melissa) lost to a team that had a Nanny (Bonnie), a Short Order Cook (Julia), and a Pastry Chef (Jen). Ramsay also reminded Josh that he was the only chef at the moment that still have not had a decent service, and told Brad that this service was his worst one yet. Ramsay ordered the blue team to come up with two nominations for elimination.

The blue team met to discuss who they should nominate, with Melissa knowing that she would be up for elimination. Brad asked if they should base their nominations on that night’s service, which would be Melissa and himself, or on overall performance, which would be Melissa and Josh. Josh argued that he should not be up for elimination, believing that he had decent services, but the blue team agreed to do nominations based on overall performance.

Elimination

When the blue team was lined up for elimination and Ramsay asked them if their decision was difficult, the team answered that it was, with Rock shaking his head, disagreeing. Ramsay, tired of the bullshit, called Melissa down, even before asking who the nominees were, and eliminated her on-the-spot for her worsening performances, not improving since her transfer to the blue team, and running out of chances. During her exit interview, Melissa admitted to being the worst chef in the blue team that night, and knew Ramsay sent her home for wasting her second chance.

Despite Melissa’s elimination, Ramsay declared he was not done yet, and called Brad and Josh down. He criticized Josh’s constant poor performances and told Brad that his performance was worse than shit and that he complimented shit. Both pleaded their case on why they should stay, and despite Ramsay’s disappointment in both of them, he gave both of them another chance and ordered them to get back in line. With both teams equal to three now, Ramsay dismissed the chefs for the night.

Ramsay’s comment: “That was really difficult today because Brad and Josh were absolutely horrible. With Melissa, she’s very assertive and she sounds like a leader but unfortunately, she doesn’t cook like a leader.”

My opinion

Melissa deserves to go up as well with Josh and Brad tonight while the red team have the best service.

My comment: Melissa was the best chef before the sixth episode but becoming the worst chef.

Season 3 Episode 7

The seventh episode of Season 3 of Hell’s Kitchen aired on Fox, on July 16, 2007. On that episode, the team’s menus were put to the test, and an early front runner’s time was soon over.

Intro

On their way back to the dorms, Bonnie expressed surprise that Melissa was eliminated so quickly, but Rock expressed relief as it meant one less person for him to compete against. With the teams now back to gender division, Josh declared that it was game time. In the red team, Jen noted that the blue team was acting really cocky, but Bonnie expressed surprise that she was up against two Sous Chefs and an Executive Chef, and was ready to beat them.

Team Challenge

The next morning, both teams made their way down to the dining room to meet Ramsay. Ramsay noted that there were six chefs left, and with it being pretty obvious that the battle of the sexes was back on, he urged them all to take their skills to the next level. Then, Ramsay announced that for their next challenge, they would all work with leftovers as a test to turn previously used food into a stunning new dish. Each team would make one appetizer and two entrées from a tray of identical leftovers in 30 minutes.

During the challenge, while the blue team had a clear idea what their dishes would be, the red team struggled on deciding their ideas and wasted nearly half of their time on it. With 10 minutes to go, the blue team was midway on cooking their dishes, while the red team was just able to figure out their ideas. Both teams finished up their dishes and plated them.

The appetizer round took place with Bonnie and Brad going head to head. Brad presented his curry bass with crustacean tomato pasta, and Ramsay praised Brad for the amount of work he placed into his dish. Bonnie, who felt less confident after seeing Brad’s dish, presented her rustic chicken stew, and Ramsay also praised it for tasting nice. Because it was hard to identify what dish edged out the other, Ramsay gave a point to both teams and the teams were tied at 1 each. Jen and Josh were up next in the first entrée round. Jen presented her steak and eggs dish, but Ramsay said it looked like something Julia would make at work, and that he expected more from Jen. Josh presented his chicken leg with pea tendrils, but Ramsay also had some criticisms of his heavily acidic sauce, and that the chicken was undercooked. Ramsay even stated he expected more from Josh as he was a professional chef. Disappointed in both Josh and Jen, neither of them scored a point and it still remained a 1 point tie. The final pair up was Julia against Rock for the second entrée round. Rock presented his surf and turf dish that consisted of a petit ribeye and a pan seared bass and not only did Ramsay call it delicious, he praised Rock for cooking it with finesse. Soon, Julia presented her fish and chips dish, and while Ramsay said the dish was nice, it was only just fish and chips and he expected more. So, Rock won that round, and the blue team won the challenge 2-1.

Reward

The blue team was rewarded with a paintball excursion, and would compete against Ramsay in a three against one game. That excited the men as they finally had a chance to get back at Ramsay for his constant yelling at them. At the Hollywood Sports Park, the three geared up and had target practice with both the red team and Ramsay’s faces on the targets. Then, the blue team was ready to take on Ramsay, who was hiding out in full paintball gear himself. While the men were able to get some hits on Ramsay, he was able to take out Brad, Josh, and Rock in that order. Despite losing to Ramsay, the blue team said that it was their best reward yet as no one had ever got to shoot at Ramsay before.

Punishment

The red team was punished by participating in both spring cleaning and Delivery Day. When they were taking in deliveries, Bonnie was in charge of making sure they had what they needed. But when they brought everything inside, Julia noticed that they took in boxes of turbot skeletons instead of the full filets. That dismayed Bonnie as the truck had already left. After Sous Chefs Mary-Ann and Scott double checked the list, it was soon revealed that not only did they also take in snapper filets that had no skin on them, but also took in unsalted butter instead of the salted variant they use. Because of those mistakes, the delivery truck had to be called in again, and the red team had to fix their mistakes late in the night. When the blue team returned from their reward at 9:05 pm, Jean-Philippe suggested that the men could help out the red team, but the men laughed at the idea and kept walking, much to his disgust.

Creating new menus

The next morning, both teams came downstairs and expected to begin prep for service. But Ramsay announced that for that night’s service, he was letting both teams have a hand in their own menus. Both teams were required to create a menu that had 3 appetizers, 3 entrées, and 3 desserts. Ramsay told them that he expected both creativity and teamwork from this and sent them back upstairs, and they had 1 hour to create their menus.

For the red team, Jen and Bonnie came up with their ideas but ignored Julia’s suggestion on a New York strip steak idea due to her position as a Waffle House Cook. For the blue team, Brad took the lead again and inputted a lot of high-end dishes on their menu while ignoring Josh’s suggestions and deciding to call Rock’s macaroni and cheese idea a cassoulet, even though Rock argued that it was not a true cassoulet.

Before service

As both teams went downstairs for prep, Jen expressed her concern to Bonnie about their menu, but Bonnie told her not to become a bitch right now, which angered Jen. When Ramsay looked at the red team’s menu, he noticed that Julia did not have any input on it. Julia revealed her steak and shrimp dish idea, and Ramsay told the red team to put it on the menu. For the blue team, Ramsay was concerned that their menu looked very risky and asked if they could pull it off. All three of the men expressed confidence in it, and Brad expressed hope that the customers would order from their menu the most.

Both teams began prepping their kitchens. Bonnie asked for some suggestions, but Jen and Julia ignored her causing Sous Chef Mary-Ann to remind the red team that this was still a team effort. With both teams ready, Ramsay ordered Jean-Philippe to open Hell’s Kitchen.

Dinner service

As the diners placed their orders in, it became very clear that the red team’s menu looked more appealing to the customers than the blue team’s. The red team got their first ticket, and more orders soon came flooding in for them which Ramsay informed the blue team about. Julia informed Ramsay that she needed 5 more minutes on Bonnie’s bacon wrapped rabbit dish as it was not cooking right, and Ramsay had Bonnie help Julia, which upset Jen as this meant Bonnie never made the dish before. As Ramsay suggested an alternate way to cook the rabbit, Julia was upset about getting screwed by Bonnie.

30 minutes into dinner service and the blue team finally received their first order of tickets. Brad sent up his ravioli dishes, but they soon came back due to the ravioli being stone cold, and Ramsay ordered Brad to make a shrimp salad as a replacement, and also told him to concentrate. In the red kitchen, Julia finally brought up the rabbit appetizer and Ramsay urged her to keep the momentum going. Now onto entrées, Julia’s steak dish was shown to be the most requested item on the red team’s menu, much to the surprise of both Ramsay and Jean-Philippe. The blue team began to work on their entrées as well, but Rock noticed that Josh’s pan was not hot enough for the lamb entrée, even though Josh argued that it was. Julia sent up her steak dishes and Ramsay was impressed by the perfect cooking and the size of the portions, while praising her for her good job so far. Josh did not communicate with Ramsay on his lamb, and one of his orders was boiled. That frustrated Ramsay and told Josh that his actions confirmed to him that he cannot cook at all and that his time in the competition was running out. A freaked out Josh started calling for times, but Ramsay told him he would not trust him with a hotdog stand.

The red team’s entrées were moving at a great pace although some tables with two different menu orders had a different dining experience. When one of the female customers complained to Jean-Philippe that she felt insulted that the gentleman at her table was served first before her, he relayed it back to Ramsay who yelled at Josh for his lamb. Josh’s next attempt at the lamb, however, was raw, and Ramsay ordered him to get out of the shit. Ramsay ordered Rock and Brad for at least one of them to help Josh out, but neither one of them wanted to help him, much to Josh’s dismay. In the red kitchen, Ramsay noticed that Jen was not doing much and was about to clear down her station and ordered her to get a grip. Josh finally got an acceptable order of lamb out, and the blue team managed to get their entrées out to the diners. Ramsay turned to the red kitchen and informed the ladies that the blue team had overtaken them. Also, Ramsay pointed out to Bonnie that she was cooking the garnishes with no gas turned on, and mocked her shocked expression. Bonnie got disappointed by her own incompetence in the competition, and Ramsay told her that she should be ashamed of her poor performance.

Two hours into dinner service, and the blue team was almost finished with their entrées. However, some of their dishes were sent back as Brad’s sauce for the turbot was both bland and salty, which Ramsay compared to baby vomit. With the red team on their final ticket, Julia soon got confused as too many people were crowding her, and Bonnie had to redo the steak’s garnish as she burned the initial one. Their teamwork started to collapse, and Ramsay admitted that he was starting to get pissed off. Despite that, the red team managed to communicate well enough to send their last entrée out, while the blue team managed to get desserts out before finally finishing. The red team’s communication continued to collapse as Jen and Bonnie were arguing over the desserts. Even though the blue team finished, Josh felt that he could be going home after that performance.

Post-Mortem

When both teams were lined up, Ramsay told the red team that their performance on the last four tables was embarrassing. Then, Ramsay told the blue team that there was no teamwork at all and while Josh’s performance was a disaster, he was more disappointed in Rock and Brad for not even attempting to help Josh and that the people who suffered the most were the customers. There was no winning team for that night, but Ramsay named Julia the “Best of the Worst” for the red team as her steak dish was the most popular item of the red team’s menu, and she did not get one order ruined. Ramsay told Julia to think about one person from the red team for nomination, while ordering the blue team to agree on one person for nomination.

Back in the dorms, Julia weighed her options, but was leaning more towards Bonnie since while she was a good cook, she could have been a little stronger on the execution. On the blue team, Josh knew he would be an easy choice since he was up three times already, and Brad argued that he himself should not go up. As Rock left for a bit, Brad accused Josh of being bitter that Rock put him up for elimination twice in the past, but Josh argued against it. When Rock returned, the three seriously discussed who to send up.

Elimination

At elimination, Julia nominated Bonnie, and Brad announced that the blue team’s nomination was himself based on his poor leadership, though Rock argued that it was Brad himself who took control of the menu. After listening to both nominees pleas, Ramsay called Bonnie’s name, but told her to wake up. After that, he eliminated Brad for his poor leadership skills in service. During his exit interview, Brad felt that Rock and Josh nominated him out of fear he was the better chef on the blue team, and still felt he was the best.

Ramsay’s comment: “Brad was a hard worker. Unfortunately, he worked with his back rather than his brain. He lacked finesse to become a great chef.”

My opinion

Bard was a better chef than Josh but it was he menu more than the other chefs in the blue team. I think Bonnie needs to stop moaning that she not doing good. I agree that Julia was the better chef tonight.

My comment: I would’ve pick Josh to go home tonight. But for Brad he could have pick a better menu.

Season 3 Episode 5

The fifth episode of Season 3 of Hell’s Kitchen aired on Fox, on July 2, 2007. On that episode, a wedding service was held, one chef’s poor leadership caused their team to alienate them, and for the first time ever, Ramsay decided to not eliminate anybody.

Intro

On their way back upstairs, Rock asked Josh if he made the wrong decision by not nominating Vinnie initially, to which an angry Josh agreed with. Rock tried to explain to Josh that his problem was that he was rushing through things, but Josh saw it differently, much to Rock’s annoyance. Now that the blue team had only three members left, all of them agreed to start getting their act together and finally win something.

Bonnie confronted the red team for ignoring her after she was up for elimination, but Melissa reminded her that they were in a competition. That caused Bonnie to believe that she may not have what it takes to be there.

Team challenge

The next morning, Sous Chef Scott called the two teams and ordered them to go outside and get in the SUVs. Arriving at the Bristol Farms grocery store, Ramsay revealed that for the first time ever, Hell’s Kitchen will be catering a wedding reception. Both teams had to create an appetizer, a fish entrée, and a meat entrée, and had a $100 budget to shop for their ingredients. With a time limit of 30 minutes, both teams raced to get their ingredients. Melissa took the lead for the red team and suggested they use duck as their main dish, though the rest of them were a little concerned about it. By the end of the time limit, both teams made it to the check out in time, but the blue team was over budget which forced them to remove some of their items.

Once back in Hell’s Kitchen, the two teams had one hour to cook their dishes. In the red kitchen, Julia was going to sear the duck breast, but Melissa butted in and told her to do something else while also insulting Bonnie by telling Julia not to listen to her. In the blue kitchen, the three men communicated well and dealt with their own dishes. Melissa put Julia’s duck breast back in the oven so it would stay warm, but this caused more bickering, and an open ear Rock hoped that the bickering between “Hell’s Bitches” would be their downfall. With only two minutes left, the men tried to use what little they had for their dishes, and Melissa and Julia found out that the duck breast was overcooked, even though Melissa refused to take responsibility for it. With time running out, both teams plated their dishes.

After cooking, Ramsay asked if everyone used their time wisely, but the red team stated they did not, much to Ramsay’s shock. Bonnie explained that there was too much arguing going on, and Julia blamed Melissa for her dictatorship. Melissa argued that she was not trying to do everything at once, but Ramsay reminded her that he never put her in charge and the challenge was supposed to be a team effort. Ramsay then revealed that he would not be judging alone, as he invited the bride and groom, Carlota and Cyrus, to help him. This horrified Melissa, who told Ramsay that the red team should not serve their food to the couple, but Ramsay told her he was not going to let her attitude spoil the couple’s wedding.

The first round of appetizers was presented by Brad for the blue team, and Melissa for the red team. The blue team made a crab salad dish with thyme and grapefruit aioli, while the red team made a puff pastry with brie cheese and strawberry. While the couple liked both dishes, they went with the blue team as they felt the red team’s dish was more of a dessert, giving the blue team a 1-0 lead. The next round featured the fish entrées presented by Josh for the blue team and Julia for the red team. The blue team made an herbed convene sea bass with a vegetable broth, while the red team made a sea bass with collard greens and bacon. The couple preferred the red team’s dish as they felt the blue team’s broth tasted a bit foul, tying it at 1. In the final round, Rock was ready to present the blue team’s meat entrée, but Melissa tried to stop Jen from presenting their dish. However, Ramsay told Melissa that he was getting pissed off by her attitude, and ordered the red team to send up their meat dish. As the red team feared, Ramsay was extremely embarrassed when he saw the overcooked duck breast with no sides and made it publicly clear to Jen. Rock presented the blue team’s meat entrée which was a pan seared dry aged ribeye with a wild mushroom cream sauce. Since the duck breast was too rubbery to cut through, the red team’s dish was disqualified and the blue team won the challenge 2-1. That excited Josh since not only had the blue team finally won a challenge, but they were getting ready to see the red team get reamed out.

After the couple left, Ramsay let loose and told the red team, once again referring to them as “Hell’s Bitches”, that he had never been more embarrassed inside Hell’s Kitchen in his entire life and they should all be ashamed for their joke of a performance.

Reward

The men were sent to the Exhale Spa for a day of pampering. As this was their first reward since being in Hell’s Kitchen, the men were excited by it. The spa treatment managed to relax the men, and it made the three closer as they toast to an eventual victory.

Punishment

The red team was forced to decorate the dining room for the next night’s service, based on the instructions of Francisco the Party Planner. Bonnie, Jen, and Julia all agreed that the duck fiasco was all Melissa’s fault and were getting tired of her disrespectful attitude. Melissa deflected their criticisms, and her arguments made Bonnie even angrier as she was almost ready to strangle her with some chiffon. When it came to decorating the dining room, Melissa continued to dictate the red team, though the other women ignored her. Her attitude eventually annoyed the women, and Bonnie asked her what happened to her since they began the season.

Before service

The next morning, both teams began to prep for service with that night’s menu featuring the winning dishes from both teams. Melissa asked Rock for the potato dish recipe, but her overcomplicated questions frustrated him. Meanwhile, the wedding ceremony took place, and Carlota and Cyrus got married. With only an hour until service began, Ramsay found out that Melissa cooked Rock’s potatoes incorrectly, and were all black. While Melissa tried to argue that Rock told her a different way, Ramsay retorted that he had no time for her excuses as they had little time before the wedding reception. Melissa’s second batch of potatoes turned out black as well, and as the wedding guests were arriving, Ramsay chewed her out. Jean-Philippe introduced the newly married couple and Ramsay put Jen in charge of the potatoes, and she got to work redoing them.

Dinner service

Since the blue team won the challenge, they had the honor of cooking for the bride and groom’s table. The couple’s order came in, but Josh’s lack of communication got Ramsay frustrated. Sous Chef Scott informed Josh that his risotto was not ready, so Ramsay had Brad help Josh to move quicker. That caused a hold on the red team’s first order, but Bonnie delivered her first order of scallops even though Ramsay told her not to. After some initial problems, the blue team was finally able to send the bride and groom’s appetizers. The red team managed to put their differences aside and to serve their appetizers, and Ramsay took note of Julia’s performance as she was tasting a lot more since they began the competition. Francisco told Jean-Philippe that the parents have not been served yet, and was sent over to Ramsay since Jean-Philippe did not want to deal with him. Sure enough, Ramsay pushed Francisco away from the hot plate.

One hour into dinner service, and all of the appetizers had made it to the tables for the first time ever. Rock was especially proud that the blue team was finally coming together. Entrées began, and the red team got their first order. However, Melissa stalled them with her ribeye garnish, and even though she said she needed four minutes, she still sent it up, much to her teammate’s confusion. Then, Ramsay asked Melissa what she was trying to do, and told her that she shut off completely. Despite that, the red team was getting entrées out, and Ramsay praised Jen’s leadership. In the blue kitchen, Josh sent up the fish sauce, but it was stone cold, forcing him to quickly heat it up again. While the entrées were stalled up, the diners were distracted by the speeches for the newlyweds.

In the red kitchen, Ramsay asked for the sabayon, but Melissa realized that she accidentally put it in the dish water, and it spilled into it. Melissa went over to the blue kitchen to get some more, but Ramsay caught her. After pulling Melissa back to the red kitchen, he ordered her to make some more and accused her of trying to sabotage the blue team. Despite these problems, the red team recovered, and the entire dining room was served for the first time that season. Near the end of the reception, Ramsay gave Carlota and Cyrus a honeymoon gift at the Green Valley Ranch Resort and Spa.

Post-Mortem

Ramsay noted that even though both teams started off slow, they did eventually get a good pacing. Then, Ramsay announced that the blue team were the winners for finishing 3 minutes ahead of the red team. Ramsay singled out Jen as the “Best of the Worst” for the red team due to her strong performance, and asked her to come up with two nominees for elimination.

As the blue team was celebrating their victory, Melissa pleaded to Jen on her case to stay, followed by Julia. Jen knew that she would nominate Melissa, but her difficulty was between Bonnie and Julia. Bonnie feared that if she was up with Melissa, she would be sent home.

Team switched

At elimination, Jen announced that Melissa was her first nominee and Bonnie was her second. Both pleaded their case with Melissa claiming she has tried to carry the red team, while Bonnie stated that she has only started to realize her potential. After much consideration, Ramsay called up Melissa’s name and told her to take off her jacket, but shocked everyone when he announced that she would now be on the blue team. He told Melissa that a new environment might fix her downward spiral, but warned her that she was on her last chance. He then told Bonnie to get back in line, and dismissed everyone. This marked the first time in the show’s history that no one was eliminated, and someone was reassigned to another team without evening the numbers. At the end of the episode, when Ramsay was about to hang up Melissa’s red jacket, he stopped midway and retracted.

Season 3 Episode 4

The fourth episode of Season 3 of Hell’s Kitchen aired on Fox on June 25, 2007. On that episode, the annual Blind Taste test occurred, a disastrous dinner service, and a shocking move by Ramsay at elimination.

Intro

Back in the dorms, morale was very low as Jen still felt guilty over her “trash pasta” incident, but Bonnie managed to comfort her. Vinnie railed on Jen’s decision and stated that he would have kicked her out if she did that in his kitchen, much to Bonnie’s annoyance. Bonnie admitted that the long nights was getting taxing, and believed they were in actual Hell.

Team challenge

The next morning, both teams came downstairs to the kitchen and met with Ramsay, who reminded Jen of her “trash pasta” incident last night, along with Vinnie’s raw egg. Then, Ramsay revealed that one of the biggest factors behind a great chef was the taste, and said that none of them had yet pushed their palates. Because of that, Ramsay introduced the annual Blind Taste Challenge.

The first pair up was Brad against Julia. Ramsay had three different ingredients prepared for them, and both wore blindfolds and headphones with music playing. The first ingredient was American cheese, which Julia got correct, but Brad mistook it for cheddar cheese. The next ingredient was fried chicken, and both answered correctly. The last one was boiled carrots, but neither answered correctly, making the score 2-1 for the red team. Ramsay noted that Brad, a Sous Chef, lost to Julia, a Waffle House Chef. The second pair up was Rock against Melissa. Their first ingredient was boiled egg yolks which Rock answered correctly, but Melissa thought it was a potato. Both correctly scored on the potato, but neither could correctly guess venison, making the score a 3 point tie. The third pair up was Bonnie against Josh, though Bonnie informed Ramsay that she could hear him before they started tasting. Neither scored on the lobster, but Bonnie was able to correctly guess bok choy and pear while Josh failed on the two. The score was 5-3 for the red team after three rounds, and Ramsay remarked he could not believe a sous chef lost to a nanny, but told Bonnie that she did well. The final pair was Jen against Vinnie. With the red team having a huge lead, Ramsay warned the blue team that if Vinnie got the first ingredient wrong, the challenge would end. Sure enough, Vinnie mistook tuna for pancetta, ending the challenge, and the red team was declared the winners.

This marked the first time a team lost three challenges in a row since starting the competition.

Reward

The red team went on a special lunch excursion with Ramsay by eating in the dark.

Punishment

The blue team was forced to prep both kitchens for that night’s service. In addition, because they lost the Blind Taste Challenge, Ramsay had them eat a platter of offal which included; cow tongue, stomach lining, cow liver, and kidneys. Vinnie accused Bonnie of cheating since she was able to hear Ramsay earlier, but Bonnie argued against it and told the red team that any sympathy she might have had for the men were gone. While eating the offal, Rock almost came close to puking, and Brad was concerned about the domino effect it could come to.

Before service

As the men were prepping both kitchens, the women returned to the dorms and relaxed for a bit. The men showed exhaustion due to the lack of sleep and pushed themselves to finish prep in both kitchens.

As both teams were lined up, Ramsay revealed that for this service, he would have the customer comment cards decide which team would be the winner. Once everyone was ready, Ramsay told Jean-Philippe to open Hell’s Kitchen.

Dinner service

Josh, on appetizers, sent up his first risottos, but Ramsay found that he did not cook them properly and told him to get a grip. In the red kitchen, Melissa told Julia that she needed two more minutes on her appetizers, though Julia found out that her scallops were overcooked. Despite telling Melissa about the problem, Melissa ignored both Julia and Bonnie’s pleas and still called for times. While Ramsay praised Julia for her honesty, he criticized Melissa’s poor teamwork skills, and threatened to kick her out. Melissa then chewed out Julia since Ramsay expected more from her due to her skills. Josh was caught not doing anything on his station, causing Ramsay to order Rock to take over his station.

45 minutes into service, and because of Rock’s efforts, the blue diners were getting their appetizers. Moving on to entrées, Vinnie prepped his Wellingtons but told Ramsay that he needed 15 more minutes as he overcooked his initial ones. That shocked Ramsay and criticized Vinnie’s performance. In the red kitchen, Bonnie worked on her meat, but Melissa butted in and found that Bonnie’s chicken was still raw. Ramsay then discovered that Bonnie sliced the chicken in half and placed back in the pan. After Bonnie gave an unconvincing answer, Ramsay derided Bonnie’s performance so far as she has given him nothing but “dumb blonde” answers, and declared that the chicken was now dry. Then, Ramsay got angrier when Bonnie mistakenly lied about a refire and ordered the red team to work together. Despite the problems in the red kitchen, they managed to serve 14 tables of their entrées while the blue team only managed to get 6. One of the blue team’s tables got impatient on the long wait, and a diner went up to the hot plate herself despite Jean-Philippe pleading her not to. Ramsay called her a “giraffe”, and pushed her away.

Vinnie did not communicate back to Ramsay as expected but managed to bring his order of Wellingtons up. However, Sous Chef Scott revealed to Ramsay that Vinnie flash grilled them in the oven, and it was still rare. That caused Ramsay to deride Vinnie for not caring for the customers, and when Vinnie tried to send another one, it had raw pastry still on. It was then revealed that Vinnie had to bin 6 Wellingtons and a chicken, much to Ramsay’s dismay. In the red kitchen, Bonnie needed 3 more minutes for her Wellingtons to rest and admitted that she had no idea what she was doing. Melissa and Julia checked on them and they turn out to be raw, causing more confusion for Bonnie. Ramsay then complained about there being three cooks at the meat station and that none of Bonnie’s Wellingtons being ready. Bonnie herself got frustrated by the lack of communication with Melissa.

The blue team started to catch up to the red team as they had served 21 entrées, while 28 went out for the red team. However, one of their fish orders was sent back for being too salty, and one of Josh’s crab spaghetti orders was sent back for being raw. Almost reaching his breaking point, Ramsay brought both teams together and reminded them that the customers held their fate that night. He got them back to work, but warned them that if one more dish was brought back to the kitchen he would shut down the restaurant. Bonnie continued to struggle on the meat station, and Ramsay continued to criticize her performance. Jean-Philippe came back with a cold chicken, and that happened to be the final straw for Ramsay as he closed down both kitchens.

While clearing down, Bonnie broke down and believed that she did not deserve to be in the competition any longer. Meanwhile, Rock told his team that they need to stop panicking on entrées, and any momentum they had at the start should continue.

Post-Mortem

Gathering both teams up, Ramsay told them that he looked through the comment cards, and while the majority of the customers liked the food, over 65% stated they would not return to Hell’s Kitchen due to the fact the food took too long to go out. Because of that, Ramsay declared that there was no winning team. Ramsay turned to Rock, praised his solid performance, and named him “Best of the Worst” for the blue team. Turning to the red team, Ramsay made it clear to Melissa that her pathetic performance in service meant that she would not be “Best of the Worst”, and further criticized Bonnie’s poor performance. Instead, Jen was named “Best of the Worst” since, while her performance was not outstanding, it was not terrible. Both of them were asked to name one person from their team for elimination.

Back in the dorms, Rock had already decided on who he would send up, while Jen struggled with her decision. However, Vinnie reminded Jen that she could not let her emotions override her decision.

Elimination

Ramsay asked Rock and Jen who their nominations were. Rock nominated Josh as he believed that he was no longer an asset to the blue team, while Jen nominated Melissa based on her poor performance in service. However, Ramsay criticized both of their choices, decided to overrule them with his own choices, and called Bonnie and Vinnie down instead. After much deliberation, Ramsay eliminated Vinnie for his poor performances and not taking responsibility for his mistakes. During his exit interview, Vinnie admitted that he could not do what Ramsay does due to the latter’s experience, and while he wanted to redo a couple of things, he knew he did not deserve a second chance.

Ramsay’s comment: “Vinnie talks the talk but he doesn’t walk the walk. The bottom line with Vinnie is, he’s a crap cook.”

My opinion

Gordon was right to over rule the nominated, Bonnie and Vinnie was the worst chef tonight.

My comment: Vinnie spend more time stick his head under the oven when he serve a wellington.

Season 3 Episode 3

The third episode of Season 3 of Hell’s Kitchen aired on Fox, on June 18, 2007. On that episode, a breakfast service challenge has one team on top, one chef’s poor health finally caught up to him and was forced to leave, and a disastrous service has Ramsay question one chef if they cared about the diners.

Intro

Back in the dorms, Josh was not happy with Rock about being up for elimination and felt that Rock was trying to get rid of him. Rock talked to Josh, and reminded him that they were not leaders yet, though was annoyed with Josh’s attitude. Aaron’s condition was not getting better, and he still wondered about his place in the competition.

The red team was happy about their victory, and Julia hoped they would keep winning since as the underdog, she wanted to learn more and eventually win the competition.

Team challenge

At 5:58 AM the next morning, a group of navy officers and army soldiers woke the teams up and ordered them to get dressed. Aaron was once again cramping though Rock and Brad helped him getting ready. Bonnie herself was not happy as she was in the shower when it was going on, and had to quickly get dressed and meet with her team.

With both teams down in the kitchen, Ramsay remarked that he was still disappointed in the teams, since none of them had exhibit consistency and teamwork yet. To fix that, he opened Hell’s Kitchen for breakfast for the first time, exciting Julia as she cooked breakfast food for a living. For the Army and Navy Service Challenge, both teams would serve both those units with different breakfast items. The blue team cooked for the navy, while the red team cooked for the army. The team that would finish their tables first would win.

Sous Chef Mary-Ann urged Julia to step up as a leader. Julia took the role seriously and delegated her teammates to different stations and food items. However, the blue team was severely disorganized as Aaron’s omelet pan caught fire and threw two burnt orders in the trash. In the red kitchen, the women were getting food out in quick succession with 20 tables already served in 17 minutes. The navy had not received their food yet, and Aaron’s poor performance on omelette was slowing momentum, causing Brad to name Aaron the blue team’s weakest link in a confession. Josh and Brad took over Aaron’s station, and the blue team finally sent food out to the dining room. The red team continued to send food out fast, but one of Joanna’s order of hash browns was sent back for being raw. Joanna’s problem caused a domino effect as momentum halted with a raw and salty hash brown, and Ramsay told her that he has had it with her attitude and inconsistency.

In the blue kitchen, Brad’s omelets turned out cold, and Ramsay asked Brad if he was “consistently shit”. Along with Aaron’s own problems, communication in the blue team went down. In the red kitchen, the women completed their final orders and were the winners. Ramsay praised Julia for her performance and told her to go over to the blue kitchen and help them getting sorted out. With Julia’s help, the blue team managed to serve all their tables, although Brad, Josh, and Vinnie were upset that the blue team could not get their act together. Ramsay was especially upset by the fact that none of them had step up as the leader, despite asking for one, though none of them answered.

Reward

The red team went on a helicopter ride and had lunch with Ramsay on the USS Midway.

Punishment

The blue team was forced to do KP duty, which included prepping a thousand pounds of potatoes and onions. With that being their second challenge loss in a row, the men were upset by it. Unfortunately, more problems arose for them as before peeling, Aaron collapsed, much to the concern of his team. They called for medical help, and Aaron was sent to the hospital in an ambulance. The remaining four continued their punishment, but Rock was still annoyed with Josh trying to take the leadership role as Rock thought that Josh had no skills for it.

Before service

The women returned from their reward and relaxed as the blue team finished their punishment. The blue team decided to discuss who should be the leader of the team. After a lengthy discussion, Brad was named the leader, though Rock knew that Josh changed his vote out of spite for being nominated by him.

The next morning, the blue team headed down to the kitchen with renewed energy as they had a leader now, though Rock just wanted to see how Brad would handle that position for that night. In the red kitchen, the women began prep as well, though the team’s confidence in Julia began to falter when she admitted to Mary-Ann that she did not know how to make crème brulée.

Aaron Exit

Meanwhile, Ramsay called a hospitalized Aaron, and told him that he spoke with the doctors, and because of his health problems, he could not return to Hell’s Kitchen. However, Ramsay praised Aaron efforts to try and come back and wished him well. Immediately after hanging up, Aaron expressed disappointment in being forced to leave like that, and received the coat hanging and burning picture sequence.

Ramsay informed both teams the bad news, but the blue team still expressed the hope that they could do it despite being a man down. Ramsay then informed the blue team that as the second part of their punishment, they would have to take in deliveries of water during service. With both teams ready, Ramsay had Jean-Philippe open Hell’s Kitchen.

Dinner service

The first order for the blue kitchen came in, but Ramsay criticized Rock for cooking risotto the same way as an omelet, and chewed him out for his unintentional winking due to the sweat in his eyes. In the red kitchen, Joanna cooked her risottos, but it was too salty. Rock managed to redeem his mistakes with a good risotto, and dishes were coming out of the blue kitchen. Jean-Philippe told Ramsay that they were running low on water, and Ramsay sent Josh out to help, though Josh was still exhausted from the previous punishment. In the red kitchen, Ramsay found out that Bonnie’s scallops were raw, but he was even angrier at Bonnie’s dumb question about it. With Josh returning, the blue team managed to send more food out with Ramsay praising how much the blue team’s dynamic has changed. In the red kitchen, on their third attempt at the first ticket, Ramsay smelled something foul and found out that the crab Joanna was using had gone rancid. After berating Joanna for using it for the customers as it would have killed someone, Ramsay kicked Joanna off appetizers, and sent Julia to replace her.

One hour into dinner service, and none of the red team’s orders have gone out, while the blue team has sent out nearly half of their tables. Vinnie, however, started getting slow on scallops, and Ramsay noticed a raw egg on the dish, smashing it on Vinnie’s chest. This caused Ramsay to declare he was not trusting Vinnie anymore, though Vinnie restrained himself from lashing out. The red team finally got food out, thanks to Julia and Jen. When Jen tossed out cooked spaghetti not needed, Ramsay asks for some on the next ticket. In a panic, she grabbed some tossed pasta from the trash, but Julia convinced her not to serve it, though it stalled the red team. Brad and Josh worked on their entrées, but when Josh said he was not ready with his turbot, Ramsay accused him of trying to sabotage Brad.

Two hours into dinner service, and the red team had finally served all their appetizers. In the blue kitchen, they were still working on their first ticket of entrées. Ramsay caught Brad doing something, and it was revealed that Brad was trying to scrap the burnt parts of the Wellingtons off. That pissed off Ramsay as he threatened to ram the meat up Brad’s ass if he would try to serve them, and angrily yelled if the blue team could get their entrées together. Problems in the red kitchen continued as all of Jen’s Wellingtons were all overcooked due to the slow start on appetizers, frustrating Ramsay as they still had 17 on order. As impatient customers were leaving, Ramsay reached his breaking point, ripped the tickets up, and shut down the restaurant.

Post-Mortem

Ramsay admitted that by that point, he was shattered and physically drained by the constant mistakes. He turned to the blue team and reminded them that they had not completed one service yet, criticized Brad’s performance and poor leadership skills that service, but praised Rock’s performance saying it was his best one yet. For the red team, he informed them that 95% of their customers have not been served an entrée, and was still furious about Joanna’s crab incident, along with Bonnie’s poor performance. There was no winner that service, but the red team were deemed the worst of the two for all of them making embarrassing mistakes. He then told them to come to a group consensus for two nominees.

As the blue team celebrated their victory, the red team gathered for discussion. Joanna believed that she was up for elimination, something Bonnie agreed with. Julia was disappointed with Jen trying to recycle trashed pasta, but Jen tried to deflect her mistakes. Bonnie and Melissa brought up Julia’s name since her inexperience with the fine-dining food made them believe she could not win. After much discussion, the women agreed with Joanna and Julia, though Jen still felt guilty over her actions.

Elimination

At elimination, Joanna announced herself as the red team’s first nominee, and Julia as the second. After that announcement, Jen interjected and said that she was the second nominee by explaining the “trashed pasta” incident. Ramsay was disappointed by the fact that there were three nominees, but asked all three of them to step forward. After discussing with Julia, Ramsay sent her back in line. After discussing with both Jen and Joanna, Ramsay eliminated the latter for her poor performances and the fact that she refused to admit her mistakes. During her exit interview, Joanna refused to let her elimination stop her and felt she grew stronger being here, before declaring that she would obtain her ultimate goal of opening her own restaurant.

Ramsay’s comment: “Not only did Joanna serve rancid crab that could’ve seriously made a customer ill, she completely gave up, screwed her team, and if you can’t handle one individual section, you got no chance of running a business.”

My opinion

The two easy nominated ever in hell kitchen so far, I don’t know why was Julia up where. Jen and Joanna make the worst mistakes ever in the kitchen.

My comment: Joanna was the right people to go. She mess up easily but could have kill someone.

RIP Aaron

Season 3 Episode 1

The first episode of Season 3 of Hell’s Kitchen aired on Fox, on June 4, 2007. On that episode, we got to know the contestants of that season, the teams were divided, and one team’s dysfunction suffered massively during the first service.

Intro

In the dining room, Ramsay, dressed in normal attire, stated that during that season, he will be nicer, will not yell nor swear, while admitting he was only kidding. Then, a trailer appeared with the narrator explaining what the past two winners of Hell’s Kitchen have been up to, with Season 1 winner Michael Wray opening up his own restaurant called Tatou, and Season 2 winner Heather West working in her own restaurant Terra Rose at the Red Rock Resort.

The twelve new aspiring chefs were heading down to Hell’s Kitchen in SUVs, while getting to know each other on the ride. Meanwhile, Ramsay looked over the newly redesigned Hell’s Kitchen dining room, while the chefs arrived at the restaurant soon enough. Jean-Philippe introduced himself, but before he could go into how he and Ramsay met, the latter appeared and told the contestants to cook their signature dishes.

Signature Dish Challenge

Each of the chefs created their own dishes which were judged by Ramsay himself. Vinnie was up first with his Christo crusted pink snapper, and Ramsay found the dish way too hot. Vinnie argued against it, which lead Ramsay to call him a fucking jerk. Joanna’s parmesan chicken with spaghetti was called dry and salty by Ramsay, and told her to get her Raspberry Bellini and herself back in line. Rock’s dish was scallops with potato and gnocchi, and while Ramsay was impressed with the presentation, it was ultimately ruined when Rock revealed the gnocchi were pre-made frozen. As a result, Ramsay refused to taste it. Josh’s dish was foie gras, and it turned out to be both raw and salty. Bonnie created a contemporary cheese course, which Ramsay noted was not only different, but showed how inexperienced Bonnie was at the moment. Eddie and Brad’s scallops were judged at the same time, and both were criticized for being raw and having an unneeded vanilla sauce respectively. With seven poor dishes gone, Ramsay stated that this was not looking good so far.

Before she went up, Jen was not feeling so well as she started to panic when she saw what Ramsay was telling to the previous contestants. Jen’s Vanilla Crepe with Peaches was up next, but Ramsay criticized it for being a thick pancake and having too much alcohol. Melissa’s peppered crusted steak was given the first positive review and Ramsay was pleased for tasting something delicious finally. Both Julia and Tiffany’s dishes were judged at the same time. Julia’s fried chicken penne was good, but overly peppered. Tiffany’s seafood tostada was given another positive review. Aaron was the final contestant to be judged, and presented his finger food dish. Ramsay liked it, but said that there were too many things on the plate.

Teams

Ramsay admitted that the signature dish tasting was disappointing, and told them that all of them needed to up their game. He also announced that the winner of that season would be given a head chef position at a restaurant in the Green Valley Ranch Resort & Spa, in Las Vegas, with a salary of $250,000.

As with the previous season, the teams were divided by gender, men in the blue team, working with Sous Chef Scott, and women in the red team, working with Sous Chef Mary-Ann. Ramsay introduced the Sous Chefs for their respective teams, and told the contestants to go up to the dorms and rest for the first service.

Before service

The next morning, both teams began prep for service. Brad took the lead for the blue team and got them organized and focused, while on the red team, Julia was ignored by her team despite her insistence to help due to her position as a waffle house cook. Aaron struggled making the blue team’s ice cream, but Rock came to help him. In the red kitchen, Joanna exhibited poor leadership, and dictated everything to her teammates, leaving Bonnie frustrated by that process, and Melissa and Sous Chef Mary-Ann concerned over the lack of harmony on the red team.

Once prep was completed, Ramsay gathered everyone to ask them how they were feeling. Julia admitted there was no communication in the red team, but Joanna and Tiffany shut her off. Aaron broke down crying, and while Ramsay tried to calm him down, Jean-Philippe stalled the waiting diners outside the restaurant. Once Aaron calmed down, Ramsay told Jean-Philippe to open Hell’s Kitchen.

Dinner service

The first order for the red team came in, but Joanna found out that Bonnie put the garlic in the risotto already when she wasn’t supposed to. That lead to an argument between the two of them as Tiffany tried to defuse it, all while a concerned Ramsay watched. It soon got worse when Tiffany’s quail eggs were overcooked, and Julia was forced by Tiffany to prep apples when she tried to offer help. In the blue kitchen, Vinnie’s spaghetti was overcooked, and was caught laughing over Ramsay’s slang.

41 minutes into service, no appetizers left either kitchen. Tiffany told Ramsay that she had to restart as the eggs were not cooked well. Ramsay told Bonnie to help Tiffany but Bonnie broke the yolks in the process, as Julia watched everything while peeling apples. One hour later, neither team has sent any appetizers out. Vinnie needed more vegetable stalk for his risotto, but Rock told him that they were out of it. Vinnie put water in the risotto, thinking it would work as well, but Ramsay spat it out and compared the taste to gnat’s piss. Then, Ramsay kicked Vinnie off appetizers, relegating him to washing dishes for the rest of the night, and Brad was sent there to rescue the station for him. The red team’s teamwork continued to sink as Julia, once again, offered help, but Tiffany continued to push her away. That caused Julia to break down in tears, and told Ramsay about her dilemma. Ramsay gathered the red team, and noted that there was more infighting going on than cooking. Melissa and Julia were now delegated to the appetizers, and Ramsay told them to get some food out, while asking them to work as a team.

Meanwhile, the blue team has sent out 29 appetizers, thanks to Brad’s strong performance, and the diners were happy. Aaron sent up his first order of chicken, but it was black on the bottom. As Aaron tried to redo the chicken, Julia and Melissa managed to get 17 out for the red team, though Melissa’s nitpicking on Joanna’s station caused another argument. In the blue kitchen, Aaron started to get dizzy and left for a while, and Ramsay came to check on him at the back. Josh took over the meat station but found out that all of the meat Aaron cooked was ruined, leaving the blue team no meat to continue service, and a dismayed Sous Chef Scott asked how they could they be out of meat if they have not served any. As the customers started leaving due to the lack of food, a frustrated Ramsay closed down the restaurant.

Post-Mortem

Gathering both teams up, Ramsay said that this service was embarrassing. He chewed out the red team for their infighting throughout service and dubbed them “Hell’s Bitches”. Afterwards, he reprimanded Vinnie for his risotto fiasco. Vinnie argued that Ramsay never told him exactly what he wanted, leading Ramsay to call him a two-faced lazy little fucker. Vinnie got angry at being called lazy, but Rock calmed him down and got annoyed that Vinnie was arguing with Ramsay. Deciding on a losing team, Ramsay named the red team for failing to keep up with the blue team, and for their infighting. He named Melissa “Best of the Worst” for getting food out and told her to nominate two people for elimination.

Julia, Tiffany, and Joanna came up to Melissa and pleaded their cases on why they should stay. Joanna and Tiffany both stated that Julia should leave due to her position as a waffle house cook.

Elimination

Despite Tiffany and Joanna’s pleas, Melissa nominated Joanna as her first nominee and Tiffany as her second. After listening to their pleas, Ramsay eliminated Tiffany for making too many basic mistakes and being the reason for the appetizers being slow. During her exit interview, Tiffany admitted that she had no idea how intense the competition would be, and did not want to go home, but knew Ramsay made the right decision based on heart.

Ramsay’s comment: “To be a great chef, you need great attention to detail, passion and great work ethic. Tiffany worked hard, but that was it. Nothing else.”

My opinion

Joanna try to flirt with Ramsay was never going to work because Ramsay care about the food. Josh must like raw sex. For the dinner service the girls were moaning all the time mostly Joanna. It take the girls one hour to cook a egg.

My comment: Tiffany moan about working in a waffle house but she should have learned to cook a egg.

Hell Kitchen Season 3 Overview

Season 3 of Hell’s Kitchen aired on Fox between June 4 and August 13, 2007.
